Pork Loin for Easter

Sometimes people are not sure what or when to brine meat..I say try it!  Here is a recipe for brined pork tenderloin...The meat was so juicy and the flavor...Amazing!

This sauce is so easy to make and you can use a mixed frozen berry if you want. The Grand Marnier is the bomb in the sauce...it goes so perfectly with the orange juice in the brine.   It adds some really nice color to the top of the meat too.

Grill Time!

Time to Plate....Enjoy!

Have A Very Blessed Easter!

Welcome "Jack " to my kitchen

So we were having dinner with friends a couple of nights ago and broke out the bottle...yup Jack Daniels Tennessee Honey!!! And of course I start thinking of how many things I could put that in. So "Jack" welcome to my kitchen.

First thing to do is pound out your chicken till flat. Pound the chicken on the smooth side of your chicken breast. It makes it easier.

I used honey ham and rolled this up in to the chicken breast

The next step is to brown the rolled up chicken breasts in a pan until they are golden brown, but not cooked all the way through.

Put them into the oven 375 for about 15-20 min.

Here come Jack!

I used the same pan that I browned my chicken in so that I could get all the flavors from the meat.

In the saute pan...

2 cloves of chopped garlic ( saute this up in the pan )

Add
1/2 - 3/4 cup of Jack Daniels Tennessee Honey ( let this cook down a little bit and also to deglaze the pan)

Add 2- 3 tbsp honey and 1/2 cup Jack Daniels BBQ sauce.  ( add more or less depending on your taste)

Pour this sauce over the chicken and serve!

When I plated the chicken, I placed the chicken on top of  fried battered onion rings!

Yummo!!!!

Bacon Covered Breadsticks

These are so easy to make and they taste so Yummy.... The bacon just's jazzes up the bread sticks a bit. all you have to do is add a dipping sauce, whatever your favorite is!
Enjoy!

Baguette Boat Breakfast

I am always looking for new breakfast ideas that my family will enjoy...I saw this recipe on the Today Show. I hope that your family will enjoy  it too!

Take a Baguette and remove the center of the baguette to make a boat.

Save the bread from the center for some of the filling.

You can freeze the leftover bread peices  for other recipes!

Take 6 eggs, 1 cup of grated cheese,( I used a blend of cheese but parmesan would be nice too) use about 1 cup of the bread crumbs, Juice of 1/2 of a lemon and salt and pepper. Add about 1 tbsp of dried parsley ( you can use fresh if you have it )
Mix this all together and pour into the bread boat.

If you have bacon or sausage or any other meat that you like you can add that to this recipe also. It would just add more yummieness!!!!

Bake this in a 400 degree oven for about 25-30 minutes.

This will puff over the edges a bit while it is baking.

Yummy Yummy Yummy!!!!

Breakfast is served...Now for the garnish, how bout the view from the barn!
